Super Moist Low Fat Chocolate Cupcakes with Chocolate Glaze

We absolutely love this recipe! No eggs, no butter, no oil. Simple, easy, light and about as healthy as a cupcake can be!

The cake mix is a little hard to find at the store sometimes, since most of the boxes have moved from 18.25 oz to 15.25 oz, so you may have to buy 2 boxes if you can’t find the right size. But the recipe itself is really easy to make and tastes great. The chocolate can be a bit sweet for some people, so I wouldn’t recommend putting too much on them until you’ve tested it yourself. I would also highly recommend using foil cupcake liners. They’re much easier to use and don’t stick as bad as paper liners do.

Recipe (Cupcakes)

Ingredients
  • 18.25 oz Duncan Hines Dark Chocolate Fudge cake mix
  • 1.4 oz sugar free, fat free, instant chocolate pudding
  • 1 cup canned pumpkin (not pumpkin pie filling -we used Libby brand)
  • 1 1/3 cups water
Directions
  • Step 1 Preheat oven to 350 degrees
  • Step 2 Line a cupcake tin with cupcake liners (foil liners recommended)
  • Step 3 Combine pumpkin puree and water in a large bowl and mix to combine
  • Step 4 Add chocolate pudding mix and mix well
  • Step 5 Add chocolate cake mix and beat 2 minutes

 

Recipe (Chocolate Glaze)

Ingredients
  • 1/2 cup confectioners' sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2 - tbsp 1% mlk
  • 1/4 tsp vanilla extract
  • pinch f salt
Directions
  • Step 1 Combine all dry ingredients
  • Step 2 Add vanilla and 1/2 tbsp milk, adding more (1/4 tsp at a time) if needed until smooth
  • Step 3 Add to a piping bag or use a zip lock bag and cut the corner off
  • Step 4 Drizzle onto cooled cupcakes
